With a background in engineering and teaching, Paul has always enjoyed making things, inspired by the process of creating. The challenge of taking a few simple items or ingredients and transforming them into products or dishes has always fascinated him.
Paul started cooking at home as a teenager and now enjoys cooking a wide range of vegetarian food, particularly South Indian and Sri Lankan dishes, as well as baking sourdough. As a Yorkshireman, Paul is thrifty by nature, and enjoys using relatively inexpensive ingredients to create satisfying, high-quality dishes. Paul says making porridge is a surprisingly subjective process, and he is intrigued to work with others, exploring and showcasing what makes a truly excellent bowl of porridge.
Porridge Toasts
200 g cooked porridge
2 large slices of sourdough bread
Avocado oil, for frying
1½ tbsp almond flour
40 g tahini
40 g marmalade
Place the porridge and almond flour in a large bowl, combine well, and allow tocool slightly. Using a 40 mm circular scone cutter, cut out 8 circles from the bread. Brush the bread with avocado oil and fry on both sides until golden. Spread tahini on each piece of bread. Top each piece with a tablespoon/quenelle of porridge, then finish with marmalade.
