2026 Australian Porridge Making Competition
Fifteen competitors from near and far took part in the 2026 Pearly Spurtle. The first ever competition line-up started local — with a number of Pearl Beach residents and Central Coast locals — before spreading further afield and capturing the interest of eager cooks from Sydney and Melbourne.
The diverse backgrounds, cultural influences and experience that this small number of cooks brought to the competition was exceptional. South African, Greek, French, Italian — and of course Scottish — heritage was represented in the creative dishes, with judges tasting inspired flavours like tahini & fig, coconut & pineapple, and vanilla & cardamon. And the creativity extended to just how the oats were used; with competitors serving up everything from oatmeal pancakes to congee with seafood, Mujudara, and even a porridge filled marsala snap cannoli!
The entrants professional backgrounds were just as diverse — to name only a few, the line up included a renowned journalist, Army veteran, research scientist, and even an Oscar nominated screenwriter.
The judging panel also brought an exceptional edge to the competition with their diverse backgrounds and skills:
Caroline Velik — a respected porridge master, Caroline won the Specialty Dish category at the 2025 World Porridge Making Championship and came second in the overall competition. Based in Melbourne, Caroline daylights as one of Australia's leading commercial food stylists.
Karen McPherson — a Scottish chef based in Australia, originally from Duntocher, West Dunbartonshire. Karen has worked across some of Sydney’s best pubs and hotels, building a reputation grounded in skill, consistency, and a deep respect for hospitality.
Lawrie McKinna — current Mayor of The Central Coast, and proud Scot. Lawrie was a professional football player before moving to Australia and continuing to play, then coach, at a national level and overseas. Lawrie established and coached the Central Coast Mariners A-League football team before becoming involved in politics in 2012.
